Unfortunately, it all comes down to personal preference, however, if you want a more generalist HR qualification then go for Resourcing & Talent Mgt, Managing Employee Relations, Reward Management, Learning & Talent Development. Other combinations may make a more specialist qualification however at the end of the day you just get a certificate saying Advanced Diploma which doesn't state what you did. However, if you go for an interview for a new job and they ask you questions on something that you didn't study. I know it is extra work but you can always add extra modules such as Employment Law just so you are covered.

I am having to choose my optional modules too and I have decided on mine based on what I already have experience in and what I may like to specialise in based on what areas I enjoy.

I have gone with:
Organisational Design and Organisational Development
Employment Law
Learning and Talent Development
Managing Employment Relations

The only other advice I can give, is to read through each module and make sure you are fully happy with it as if it is anything like mine, you will find it easier to write 3000 on that, than on something else.

Some may be more academic, which may or may not suit you.
At UOS our syllabus does not give this degree of choice. I cannot envisage anyone not picking employment law for all sorts of reasons!
